Food for Friday, sausage and shrimp gumbo

So I am jumping on the weekly bandwagon theme day... Today on Facebook (imagine that) my cousin and also a friend of mine both asked for my Gumbo recipe, upon writing it down for them my girlfriend told me I should start blogging recipes weekly for her to steal because she is a "open the box and follow the directions" cook... and it clicked that maybe she was right! Anika started "thinkin' about it Thursday" then she inspired Stefi to do "What up Wednesday" so why not start "Food for Friday" right!? Anyways, today I cooked gumbo in the crockpot (it's one of our absolute favorites in this house) So for my first "Food for Friday" Gumbo it is! Below is my recipe and a few hints on how I do it... now keep in mind that I never really measure my food out and I never really make it the same each time, but this is the base of it :)


We do sausage and shrimp gumbo, but chicken is equally yummy

1 can family size tomato soup
1 cup diced green peppers
1/2 cup diced red peppers
1 cup corn
1 can diced tomatoes with liquid (works just as well with 2 fresh tomatoes)
1-2 cups okra (we buy it frozen)
1 med. onion diced
1/2 lb sausage (we use the Hot sausage links or New Orlean brats)


Combine all the above in crockpot with equal amount water as tomato soup, add another 4-6oz tomato paste with another cup of water

Add spices to taste: cayenne pepper, black pepper, salt, garlic powder

Cook on high for 4 hours

Put butter and garlic in a frying pan, add shrimp, cook thouroughly

Add shrimp to cockpot and cook on low for an additional 30 minutes... EAT!

We add ritz crackers or cheesey bread to ours for more filler :)
