Chicken & Bacon Quesadilla w/ Mexican Rice


A twist on a favorite dish :)

Ingredients
Noncooking spray
6- tortillas of choice (we use whole wheat or in this instance a jalepeno & cilantro)
1 1/2 C shredded cheese (we shred in pepperjack and colby)
1-2 diced jalepenos
3-4 Tbls chopped green onion (we didn't have any this time and used white onion and it was still yummy)
3 slices diced cooked bacon
1 Chicken Breast

To Do
Put chicken breasts in a skillet and cook
Add to chicken the bacon, onion, and jalepenos, fry up until veggies are tender (5-6 minutes)

Coat one side of tortilla with cooking spray and place coated side down on wax paper or cutting board
Spred cheese on half of tortilla and spoon on some mixture, fold tortilla on itself

Preheat 10inch skillet on Medium
Cook each side of quesadilla for 2-3 minutes (I use 8inch tortillas and can cook 2 at a time)
Finish with other quesadillas (if you want to eat as a family, which we do, you can put the baked quesadillas in the oven warming at 300, while you cook the others)

We do a basic Mexican rice
Cook the rice in broth (we use chicken) with a couple slices of red pepper and onion
Bring above to boil until rice is tender
add in some tomato paste, cumin, garlic, and chili powder then heat until all is absorbed
We add in corn as well for some extra veggies
