Bruschetta Chicken Bake
1 can undrained diced tomatoes
1 pkg Stove Top stuffing (I use the chicken or herb kind)
1/2 C water
2 cloves garlic (minced)
1-1/2 lbs boneless chicken breasts, cut into bite size pieces
dried basil
1 C mozzarella cheese
Heat oven to 400 degrees F
Stir tomatoes, stuffing mix, water, basil and garlic just until stuffing mix is moistened
Place chicken in lightly coated 13x9
sprinkle chicken with cheese then top with stuffing mixture
Bake 30 minutes or until chicken is cooked through
I admit this is not my recipe, I stole it from Stove Top, but it is so good I just had to share. I did make a few changes, I added a bit more seasoning (Italian seasoning and oregano) I
