Food for Friday, Potato, Bacon, Cheddar Soup

Potato, Bacon, Cheddar Soup

3 C chicken broth
1 lb peeled and diced potatoes
1 C chopped carrots
1 C chopped celery
1 C chopped onion
8-12 cooked and diced bacon strips
salt and pepper to taste
1/2 C half and half
1/2-1 C cheddar cheese shredded
Add everything except half and half and cheese to crock pot and cook on High for 5-6 hours or until all veggies are soft
Add in half and half and cheese and cook an additional 20-30 minutes to help thicken the soup


I added a can of corn this last time and took a masher and mashed some of the potatoes down to get a creamier texture... but just play it by ear and make it to your own taste! It's a great soup for the winter months!
