Black Bean Chipotle Soup

Black Bean Chipotle Soup

6 cups chicken or vegetable broth
1 lb black beans
1 cup diced tomato (I seed mine)
1 cup diced onion
2-3 diced carrots
2-3 diced celery
2 chipotle peppers diced (leave seeds in)
1 cup corn
3 tsp cumin
salt and pepper to taste

Can add spicy sausage such as Chorizo for extra texture, heartiness, and spice...

Add all ingredients into crockpot and put on low for 7-8 hours or med-high for 6 hours

We made a side of cornbread and topped the soup with sour cream and fresh cilantro for added color and flavors... enjoy!
