Enchiladas

So anyone that knows me knows I am always in the mood for 3 things when it comes for food, they are
1. Jalapenos (yes please on everything!)
2. Ice Cream
3. Mexican food
Yep I could almost consider these my 3 food groups!

Lately my hubby and co-workers and others have really been diggin' my new enchiladas. I've done my salsa verde enchiladas, but today I'm doing a good ol' regular enchilada sauce recipe...

First the filling... a black bean corn salsa...


1 can black beans (drained and rinsed)
1 can corn (drained)
1 fresh jalapeno
about a handful of diced cilantro
juice of half a lime
(can add diced tomatoes and onions too, this particular time I didn't because I made fresh pico de gallo on top and didn't want to over power the dish as a whole)

Enchilada's
Ingredients
8 tortillas
1 LARGE can of enchilada sauce
1 can refried beans
2-3 chicken breast cooked and diced or shredded
black bean salsa
a lot of cheese 

Directions
Fold and position tortillas to fill in a greased 9x13 pan
Spread some refried beans into each tortilla
Spoon in equal amounts of the black bean salsa
Add equal amounts chicken to each enchilada
Spoon about 2 Tbsp of enchilada sauce into each tortilla over inner goodies
Add some cheese
Fold and roll so seam of tortilla is on the side

Pour rest of enchilada sauce over enchiladas
Cover with foil
Cook in a pre-heated 350 oven covered for 20 minutes
Uncover add additional cheese and cook another 5-10 minutes

Spoon out, add pico de gallo and enjoy!
