Cinnamon Sour Cream Coffee Cake
I hadn't had coffee cake in a really long time because I never have found a recipe that quite hit the nail head on, but I took a regular recipe and a moist sour cream recipe and joined them and the results were great! I'm very happy and since half the pan was gone before I was ale to take a picture I think it goes to show the family agrees :)
Ingredients:
1 Cup softened butter
2 Cups white sugar
2 Eggs
1 Cup sour cream
1 tsp vanilla extract (missing from picture because I almost forgot to add it, this was a me addition)
2 Cups flour
1 tsp baking powder
dash of salt
Topping
1/3 Cup flour
1/2 Cup brown sugar
1 1/2 Tbls ground cinnamon
2 Tbls melted butter
Preheat oven to 350 degrees F, Grease 9x13 pan.
In a large bowl (or kitchen aid) cream together 1 Cup butter and white sugar until light and fluffy, beat in eggs one at a time, then stir in sour cream and vanilla. Mis in 2 Cups flour, baking powder and salt. Spread 1/2 of batter in prepared pan.
Prepare filling in medium bowl, mix 1/3 Cup flour, brown sugar 2 Tbls melted butter and cinnamon, spread a layer on top of half the cake, spread second half of batter down, sprinkle on remaining topping
Bake 35-40 minutes or until toothpick comes out clean from the center... enjoy!
