Food for Friday A Farmer's Breakfast Casserole

A Farmer's Breakfast Casserole

Ingredients
3 Cups frozen shredded potatoes (or tator tots)
1 Cup ham or other protein
1 Cup Cheese
1 green onion
2 jalapenos
4 eggs
1 1/2 C milk or 12oz Evaporated Milk
salt
pepper
cayenne pepper

Directions:
Grease a 9x9 pan
lay down potatoes
layer on ham, cheese, green onions and jalapenos
sprinkle on spices
Mix in a bowl, eggs, milk spices and pour over potatoes
Bake in preheated oven at 350 degrees for 40 minutes

This makes a hearty dinner meal too!
