Ham, Potato, & Corn Chowder
12 oz cooked & diced ham
1 can of corn, drained (or 2 Cups frozen corn, thawed)
2 Medium sized potatoes, cubed
2-4 small celery stalks, trimmed & chopped
1 small onion, chopped
1 serrano or jalapeno pepper, minced
salt & pepper to taste
1/2 tsp dried thyme
2 Cups chicken broth
3/4 Cups milk
3/4 Cups half & half
(to cut down on fat or be less creamy, use 1 1/2 Cups milk)
Add all BUT the milk to the crockpot and cook on high for 3.5 hours, then add the milk and cook on low for an addition1-2 hours... (If you add the milk at the beginning, it's not a big deal, just cook on low for 6 hours to help it not brown)
Such a comfort soup and so good! We grated a bit of cheese into it at the end of it for some extra texture and creaminess... Yummmm...
