Baked Mac N Cheese w/ Grilled Chicken
1 C cooked elbow macaroni
1/2 C egg substitute
1 C evaporated fat-free milk
1 C small curd low-fat cottage cheese
1 C shredded sharp Cheddar cheese
dash of salt
1 Tbsp dijon mustard
2 pre-grilled/cooked chicken cut into 1 in strips
1. Prepare macaroni according to package directions. Drain and set aside.
2. In a large mixing bowl, combine the remaining ingredients with cooked macaroni
3. Coat a 1-quart baking dish with cooking spray and spoon the mixture into the dish.
(Sprinkle the top with bread crumbs for added texture)
Bake at 350 degrees for 1 hour and serve hot

Alan is here in NC with us so our menu at all meals has changed to accommodate his diabetic restrictions and not only are we feeling better and losing weight we are learning new recipes and how to put twists on our old recipes to make them work... it's been fun and I'm excited to try homemade diabetic friendly BBQ sauce, which is on the agenda for Saturday!
