Food for Friday, Homemade BBQ sauce fit for a Diabetic

So I had this typed up and set to post automatically yesterday, so I thought... then I looked today and well I had set it to post next Friday... so Oops! A day late!

Homemade BBQ sauce fit for a Diabetic


Ingredients
1Tbsp olive oil
1 med onion chopped   
Fresh ground pepper  
1 Tbsp white vinegar
1 1/4 C tomato sauce      
1/4 tsp dry mustard
1 bay leaf           
1/4 tsp curry powder 
1/4 Tbsp chopped parsley
1/4 tsp hot pepper sauce

Steps
1. In a medium saucepan, heat the oil and saute the onion until tender (about 5 minutes)
2. Add remaining ingredients and simmer for 20 minutes
3. Discard bay leaf and transfer into a storing container


Now what I did was all the above, except I doubled it and put it all in the crockpot with some pulled pork and slow cooked it for 6 hours on low... it was delicious and it made our whole home smell amazing! We sliced a hoagie bun, put on the pulled pork, sprinkled on some cheese and it was divine!
