My version of Shepherd's Pie
4 large potatoes
1 lb ground beef
1 green pepper chopped
1 med onion chopped
2 cloves minced garlic
1 can beef broth
2 Tbls soy sauce
2 Tbls Worcestershire sauce
2 Tbls butter
2 Tbls flour
1/2 C sour cream
1 C shredded cheese
Pre-heat oven to 400 degrees F
Clean potatoes, peel skins off, boil water in large pot and cook potatoes until soft (about 15 minutes)
In the meantime...
Brown meat, drain...
Cut veggies and saute them for 5-6 minutes in a bit of EVOO, add in meat mix together, make center hole in meat mixture and add butter, let it melt and add flour, wait 1 minute and add beef broth, soy and worcestershire sauce
Bring to bubble and simmer 2-3 minutes
Pour into pie dish
Drain potatoes put into large bowl, mix in sour cream and mash, pour on top of meat mixture and pop into oven... once potatoes start to brown, sprinkle on cheese and place back into oven until cheese is melted
