Food for Friday, Lime chicken with avocado and lime salsa



Lime chicken with avocado and lime salsa



Salsa:
2 large avacados
1 medium tomato
1/4-1/3 medium red onion
1-2 jalapenos
3 Tbls lime juice
cilantro to taste (I only added about 3-4 Tbls chopped)




Chicken:
sprinkle 1-2 Tbls of olive oil on defrosted chicken breasts
sprinkle with salt and pepper and squeeze a lime slice or 2 over.... grill for 4-5 minutes on each side




Rice: 
I use jasmine rice for this recipe and prepare it as directed



Lay the rice down, place chicken on top and spread salsa over... garnish with cilantro and lime wedges...


Enjoy!
The salsa is really good just on tostidos or corn chips...
