Food for Friday, Blueberry Cream Pie

Blueberry Cream Pie

Ingredients

Crust: 
1 1/2-2 Cups crushed graham crackers
1/2 Cup pecans
1/4 Cup Sugar
1/2 Cup melted butter
1/4 tsp salt

Filling:
12 oz soft cream cheese
3/4 Cups sugar
1 1/2 tsp vanilla
1 1/2 Cups heavy cream
3 Pints blueberries
3 Tbls jelly glaze

Instructions:

Crust:
Preheat oven to 350 degrees F
Add ingredients to food grinder or pulsating blender and pulse until nuts are finely chopped
Press evenly into a deep dish pie pan
Bake on middle rack for 8 minutes
Let crust cool completely

Filling:
Combine Cream cheese, sugar, and vanilla and mix well
Whip cream and fold into cream mixture
Mix in 2 pints of blueberries and spoon mixture into pie crust
Arrange remaining blueberries on top
Heat glaze in pan and brush on top of blueberries
Chill 3-4 hours!
