Food for Friday

Spicy Garlic Salmon

Alright... you need some wild fresh salmon... 

As well as:

2 cloves crushed garlic
1 dried chile pepper (can substitute for 1 Tbls cayenne pepper)
1-2 Tbls olive oil
2 Tbls lemon juice
salt & pepper to taste

Mix the above and pour over salmon (I like to line my 9x13 pan with aluminum foil, lightly grease and use it to cook the salmon, it is less mess and there is no dripping)


Oven should have been pre-heated to 400 degrees. Bake Salmon for 20-25 minutes (or until nice and flaky)


While the salmon is cooking I made a quick fresh salad, romaine lettuce, carrots, broccoli and tomatoes... with cheese, spicy ranch and topped with croutons it makes for a healthy side dish...


Go ahead and salivate... so delicious! I'm happy it turned out because I altered it from the recipe I had previously found for this...

Yummy I love salmon and I love salad so this was the perfect meal for me for this particular night... life is good, food is good, love is amazing!
